I LOVED this book!

Dr. Barnard, adjunct associate professor of medicine at George Washington Med School, is an engaging story teller who weaves in fascinating science and history. I learned for example how cheese is made, why it is so high in sodium and that many of the characteristic smells in various cheeses are the result of the same bacteria and/or their byproducts that cause body odor, stinky feet, or the smell of feces.

Another interesting fact: Human breast milk cannot really be made into cheese -- because our milk is much lower in protein than that of cows and goats (perhaps evidence that our species does not really need so much protein?)

This book also makes it clear that tons of good science suggests that cheese and dairy play a roll in many of the most common chronic diseases -- both types of diabetes, heart disease, many cancers, arthritis, migraines, acne, tendonitis and digestive issues....and this science is further supported by the clinical experience of many doctors who have seen amazing recoveries from these illnesses when people eliminate cheese and other dairy from their diets. Barnard explains, "The French Paradox," and some of the hidden reasons, why so few people have any idea this information even exists.

The book is a quick read, full of engaging material with an index, references and an AMAZING looking set of recipes for many traditional comfort foods -- remade to be much healthier.
